What goes wrong

It smells of nothing after four months

Updated

On this page5

A customer opens a jar they bought in spring and it smells faintly of dust. Nothing went wrong in the sense of a defect. The product did exactly what ground spice does, and most of the loss happened before it ever reached them.

Where the 30 percent went

Ambient grinding costs roughly 30 percent of volatile content in a single pass, because the mill runs toward 95 °C and volatile oil is volatile. If you bought pre-ground, that already happened at somebody else's mill on a day you know nothing about, possibly a year ago.

So the jar did not start at 100 percent. Depending on the supply chain it may have started at half.

Then time takes the rest

After grinding the loss is continuous rather than dramatic. Surface area is the driver, so a fine grind fades faster than a coarse one. Air and light accelerate it, and oxidation changes the character of what remains rather than simply reducing it, which is why old spice smells wrong as well as weak.

Whole spice avoids almost all of this. An intact peppercorn is a sealed package that nature built.

Whose fault it is

Worth being honest here, because the instinct is to blame the customer's cupboard. Divide it roughly: the mill, the months between mill and jar, the packaging you chose, and the customer's shelf. Only the last one is theirs, and it is usually the smallest share.

If a line consistently comes back as flavorless, the answer is upstream of the customer and probably upstream of you.

What actually slows it

Buy whole and grind close to fill. Buy ground in smaller quantities more often rather than one annual purchase. Choose an opaque or amber container for anything you care about. Fill in a dry room so you are not sealing in moisture that accelerates everything.

And put an honest best-before on it that reflects flavor rather than safety, because a dry spice does not become unsafe. Telling a customer the truth about a six-month peak is a better position than letting them discover it.
