Ripeness and moisture check

Updated

On this page5
One reading decides whether honey keeps or ferments, and it has to be taken before frames are combined rather than after.

What your reading means

Under 17%
Dry. Bottle it.
Well inside every grade and every keeping threshold.
17, 18.6%
Normal. Bottle it.
Where finished honey usually falls, and inside the ceiling for the top US grade.
18.6, 20%
Keeps, but do not claim a grade.
Above the Grade A ceiling. Sell it, refrigerate longer-held stock, and do not print a grade you do not meet.
Over 20%
Do not sell as shelf-stable.
Fermentation becomes likely. See it came out too wet.

The three numbers, and they are not the same number

  • About 18% is where bees cap. Behavior, not a standard.
  • 17 to 21% is where finished honey typically falls. A description.
  • 18.6% is the ceiling for the top US grade. A specification, and only binding if you choose to claim a grade.

If you have no refractometer

Take only capped frames, and use the shake test on the partly capped ones: if nectar rains out of the open cells, it is not cured. That is covered on is the honey ready to take, and it is a good proxy right up to the point you start blending frames to make up volume.

Measure before you blend, not after. Moisture averages across whatever you combine. One wet frame in a bucket of twenty raises the whole bucket, and a bucket cannot be separated back out.

If the reading is high

Before extraction, put the frames back and let the bees finish. That is the cheap outcome and the reason to check first. After extraction the options narrow sharply and are on it came out too wet.
