Closures and liners

Updated

On this page5
A lid that screws on is not a lid that seals. For honey the seal matters less than it does for a hot-filled sauce, because honey is not relying on a vacuum, but the wrong closure still leaks in a bag and crystallizes at the threads.

Two families, and glass jars use the one nobody explains

Most plastic bottles use a continuous thread finish, written as two numbers: 38-400, 24-410. First number is the diameter in millimeters, second is the thread profile.

Most glass jars use a twist or lug finish, written as a number and letters: 63TW, 58TW, 43TW. These are the metal lids you see on jam and honey, and they are not interchangeable with continuous thread even at the same diameter.

This is why lid sizing confuses people. A 63TW jar and a 63mm continuous thread bottle sound like the same size and take completely different lids. If a lid nearly fits, it is the wrong family rather than the wrong size.

The liner

Metal twist lids come lined, and for honey the liner is doing much less work than it does for an acidic or hot-filled product. Honey is chemically undemanding: it does not attack a liner, and it does not need a vacuum to keep.

What it does do is creep. Honey works its way into threads over weeks, crystallizes there, and welds the lid on. That is a filling problem more than a closure problem, and it is covered in filling by hand without the mess.

Checking a fit before you order

Match the finish exactly, including the letters. 63TW to 63TW. If a jar's finish is not published, that is not the same as there being no lid for it, and it is worth asking rather than assuming.
