Juice HACCP

For the whole shelf life

Updated

On this page9
Moderate abuse is a regulatory term and it means a warm van.

The requirement

The reduction must hold "for a period at least as long as the shelf life of the product when stored under normal and moderate abuse conditions".

Which couples two decisions

The stated shelf life and the validated process. Extending the first without revisiting the second is a change to a HACCP plan rather than a marketing adjustment.

Normal and moderate abuse

Not ideal storage. A product that holds up refrigerated and fails in a warm delivery van has not met this, and the van is the realistic condition rather than the exception.

So shelf life is a claim to be earned

A longer date sells better, travels further and needs more proof. The honest route is to validate the life you can support and state that, rather than to state what the market wants.

Packaging is part of holding it

A container that admits oxygen or light over weeks changes the product within the stated life. The process reduced the pathogens; the package has to keep the result.

Which brings PET into the question

PET is the catalog's largest material and 246 of the 305 containers on this shelf. Its oxygen barrier is good rather than perfect, which for a long-dated juice is a real consideration against glass.

Test at the end of life, not the start

Hold samples under the conditions the product will actually meet and examine them at the stated date. That is what the requirement is asking you to be able to show.

And keep the samples

Retained units from every batch, held to the end of their life. When a question arrives about a batch, a retained sample is the only evidence that is not a reconstruction.

21 CFR 120.24, process controls for juice. A processor must use "control measures that will consistently produce, at a minimum, a 5 log (i.e., 10 5) reduction" in the pertinent microorganism, effective "for a period at least as long as the shelf life of the product when stored under normal and moderate abuse conditions", with the requirements met and "final product packaging within a single production facility operating under current good manufacturing practices". law.cornell.edu
The Davis Pack Supply catalog, measured 18 October 2026. The beverages shelf is 558 rows: 305 containers and 253 closures, 246 PET and 59 glass, from 30 to 976 mL with a median of 118. No HDPE and no PP. The closures include 159 continuous thread, 27 spouted, 19 flip top and 18 lug and twist, and no crown finish anywhere on the shelf.
Written from 21 CFR 120.24 and 101.17(g), and from the catalog as it stood on 18 October 2026. Whether a given product is a juice, an acidified food, a dietary supplement or an alcoholic beverage decides which regime applies, and that determination is specific to a formula and a label.
