The ten in the main window

Updated

On this page10
One container window, four regulatory positions.

The juices

Cold pressed juice, shelf stable juice, lemonade and agua fresca. These are squarely in juice HACCP and the 5-log question applies to all of them.

The acidified ones

Switchel and tonic, where the keeping quality comes from acid. That is the acidified food regime, with scheduled processes, and the hot sauce and syrups properties cover it.

Kombucha

A live ferment. It continues working in the bottle, which produces pressure, and it can drift above the alcohol threshold that would move it into a different regime entirely.

Which makes it the hardest container problem here

Pressure in a sealed bottle needs a container and a closure rated for it. Nothing on this shelf is, and that is worth knowing before a case of bottles is ordered.

Horchata and protein shake

Both are suspensions that separate, both are low acid in their classic forms, and both raise preservation questions that neither juice HACCP nor acidified foods answers neatly.

Mixers

Which may or may not contain juice. A tonic with no juice is a different regulatory animal from a lime cordial, and the ingredient list decides rather than the category name.

The archetype treats them as one

A bottled beverage, 240 to 1,000 mL, narrow neck, crown or continuous thread. That is a fair description of the container and it flattens four regulatory positions into one shelf.

So read the regime before the container

The window is the same for all ten. The fill temperature, the barrier requirement and the closure are not, and those follow from the regime rather than from the archetype.

Protein shakes are the odd one out

Low acid, high protein and a suspension. Neither juice HACCP nor acidified foods is written for them, and the preservation answer is usually retort, aseptic filling or refrigeration rather than anything on this page.

21 CFR 120.24, process controls for juice. A processor must use "control measures that will consistently produce, at a minimum, a 5 log (i.e., 10 5) reduction" in the pertinent microorganism, effective "for a period at least as long as the shelf life of the product when stored under normal and moderate abuse conditions", with the requirements met and "final product packaging within a single production facility operating under current good manufacturing practices". law.cornell.edu
The Davis Pack Supply catalog, measured 18 October 2026. The beverages shelf is 558 rows: 305 containers and 253 closures, 246 PET and 59 glass, from 30 to 976 mL with a median of 118. No HDPE and no PP. The closures include 159 continuous thread, 27 spouted, 19 flip top and 18 lug and twist, and no crown finish anywhere on the shelf.
Written from 21 CFR 120.24 and 101.17(g), and from the catalog as it stood on 18 October 2026. Whether a given product is a juice, an acidified food, a dietary supplement or an alcoholic beverage decides which regime applies, and that determination is specific to a formula and a label.
