Is this for you at all

Updated

This is the least regulated craft in the library and one of the hardest to run a business in, and those two facts are related.

There is no standard of identity to meet, no filed process, no mandatory kill step and no pH to hit. What there is instead is a crowded market, a product most buyers already have a habit about, and a freshness window short enough to make distribution genuinely difficult.

The freshness window is the business model

Coffee is at its best for a short period after roasting, and the window is short enough that a roaster selling through a distributor is selling a different product from one selling at the door. That single fact decides the shape of the business before anything else does, and it is why so many small roasters are also cafes or subscription operations.

You will compete on something other than price

Large roasters buy green coffee at a scale and a price a small operation cannot approach, and their logistics are built for this product. Competing on cost is a losing position. Competing on freshness, on specific origins or on a relationship with the buyer is not, and all three are things scale makes harder rather than easier.

Tea is a different business wearing the same clothes

Tea is not roasted, does not off-gas, and keeps far longer. A tea business is about sourcing and blending rather than about a process you run, and the packaging problem is moisture and aroma rather than carbon dioxide. The two sit together because they are sold to the same person on the same shelf, not because they are the same craft.

What the skill actually is

For coffee, roasting consistently and tasting accurately, which takes longer to learn than people expect and cannot be shortcut. For tea, sourcing and blending. In both cases the differentiator is a palate and a supply relationship rather than equipment.

What this property can and cannot tell you

It covers the packaging decisions, the staling chemistry and the claims you have to be able to support, because those are the parts with answers. It does not teach roast profiling or cupping, which are learned by doing them under somebody who already can.

Written from federal regulation and from the published physics and chemistry of staling, not from a laboratory. There is no standard of identity for coffee or tea, so most of what governs a product here is the general requirement that labels be truthful and claims be substantiated. Anything here is a starting point for a conversation with your state department of agriculture, not a determination that you comply.
